Kokeich is made of finely ground tea (konacha), which is produced from sencha and kabusech tea. This tea contains small fractions of tea, separated by sifting during sorting. Finely ground tea is mixed with water to produce a substance resembling dough or pasta. Then it is placed in a special machine (extruder), similar in principle to the machine for making pasta. By pressing the “tea dough” through small holes, it gets the form of thin long pasta. Then they are finely chopped and dried in a certain way. The result is a product with a unique taste and aroma resembling thin sticks or shavings in shape. When brewing, the infusion turns translucent, rich yellow-green with the aroma of sea freshness.
